French inspired restaurant built with quality at its core

Inspired by France’s most famous neighbourhood bistros, the design of Bistro Guillaume’s is relaxed and welcoming.

When Bistro Guillaume began the process for refurbishment, they sought a relaxed atmosphere without compromising quality. Located on Melbourne’s Crown Casino promenade along Southbank, the modern, airy bistro features a fitout aligned with a relaxed and unpretentious dining experience.

Proven expertise and experience entrusted to bring a vision to life

Schiavello Construction VIC was appointed head contractor for the Bistro Guillaume fitout following a tender process. The project was awarded based on our familiarity with the Crown site, experience in completing similar projects, and competitive pricing.

The brief was simple; a traditional French bistro defined by the food it serves within a modest setting. The challenge was to construct an interior that evokes the sense of a traditional bistro within a shell designed in 1996.

A statement restaurant that is immediately recognisable

A bright green marks the restaurant from the vestibule at the interior retail street. The splash of freshness makes the restaurant instantly recognisable.

Restaurant goers are met by a framed bevelled mirror wall paneling upon entry; strategically placed to emphasise the impressive double-height space. The French oak timber panelling and mouldings reinforce the traditional bistro aesthetic.

The installation of a new sliding door system allows the terrace doors to open without having to move any furnishings; resulting in an easy to access alfresco dining area. The alfresco area, together with a newly installed retractable awning makes the space perfect for outdoor dining year round.

The green bar is the focal point of the restaurant. Clad in a traditional zinc counter and timber mouldings lacquered in a bright green finish, the bar carries the element of fun introduced at the exterior.

Construction programme unaffected by additional works

By leaning on our design history, Schiavello’s construction team was able to carry through the design intent – transforming the client’s vision into reality through quality craftsmanship. Our Victorian team was able to manage additional works during the construction stage without altering the project timeline.

Directly employing carpenters allowed Schiavello Construction added control over the project. This included increased flexibility and the ability to effectively manage design changes as they arose during the physical construction process.

The result is a French bistro along a Melbourne riverwalk that integrates harmoniously into the surrounding environments.
